Carrot Coconut Milk Smoothie

  • Small pieces of carrot – 1 cup (approximately 3 medium size carrots)
  • Small pieces of Coconut – 1/2 cup (approximately half shell of small size coconut)
  • Jaggery powder – 1 – 2 table spoon (optional)
  • Water – 1 ½ cups

Instructions

Choose good quality carrots that are small, firm to touch, bright orange and smooth. Avoid carrots that are soft to touch and with cracks.

Choose good quality coconut with good amount of liquid, feel heavy for its size, eyes should look clean and dry. avoid coconuts with cracked shells, any signs of mold around eyes. After crack open the coconut the smell should be pleasant and flesh color should be white. If the coconut smells unpleasant and change in flesh color then discard.

If we plan to remove the skin also it is still important to wash carrot first so that germs on the skin cannot get inside the carrot when you peel or cut the carrot.

Clean the carrot by scrubbing the carrot using vegetable brush to remove dirt under running water until cleaned the outer skin for few minutes.

After crack open the coconut remove the white flesh using sharp knife.

After removing all the pieces of coconut, if dirt presents then place the coconut pieces in the strainer and wash them under running water.

Cut the both ends of the carrot and chop them in to small pieces.

Cut the carrot and coconut in to small thin pieces will make easier for the blender(basic) to handle.

Gather all the ingredients for easy access to make coconut milk carrot smoothie.

– 1 cup small pieces of carrot

– 1/2 cup small pieces of coconut

1 tablespoon powdered jaggery (optional)


Preparation of coconut milk along with jaggery

Place 1 cup water in a pan over medium heat until warm.

In jar place small pieces of 1 cup of coconut and 1 tablespoon jaggery. Then grind for few seconds until get the coarse mixture of coconut and jaggery.

Then grind for few seconds until to attain very fine pieces of coconuts.

Then grind for few seconds until pureed the coconut.

Pour the coconut mixture through nut milk bag/cloth filter in a bowl.

Using hands Squeeze the muslin bag along with coconut puree to extract as much of the coconut milk as possible.

This extracted coconut milk is used to blend with the  carrots puree.


Finally blend both the carrot puree and the extracted coconut milk

In clean jar place small pieces of 1 cup of carrot.

Then grind for few seconds until to get the coarse pieces of carrot.

Grind for few seconds until to attain very fine pieces of carrots.

Add remaining half cup coconut milk to the jar. Then grind for few seconds to pureed the carrots.

So, the fresh coconut milk carrot smoothie is prepared.

Pour the blended coconut milk carrot smoothie from jar into the glass tumbler and drink immediately or stores it immediately in the air tight storage containers in refrigerator for up to 1 day.

Tips

  • If using regular blender then cut the carrots and coconuts in to small and thin pieces.
  • Use warm water while blend the coconut.
  • If using regular blender then initially add less water until to attain the very fine pieces of coconut and then add the remaining water. Repeat the Same for carrots but with coconut milk.
  • We can also increase the quantity of carrots to make it thick consistency and eat it with a spoon.
  • We can also add little saffron, cardamom or dry ginger for flavor and nutrition.
  • Enjoy the coconut milk carrot smoothie by sitting down by take a smaller sip or small gulps mixing with the saliva. (Avoid standing & gulping the juice).
  • To avoid oxidation, drink the coconut milk carrot smoothie immediately otherwise stores the juice immediately in the air tight storage containers in refrigerator.

Preparation of coconut milk along with jaggery

  • Heat water in a pan until warm
  • Grind small pieces of coconut and jaggery in jar
  • Add 1 cup warm water to the coarse mixture of coconut and jaggery
  • Add remaining 1/2 cup warm water to the fine mixture of coconut and jaggery
  • Filter the finely ground coconut mixture
  • Extract the coconut milk using cloth bag

Finally blend both the carrot puree andthe extracted coconut milk

  • Place small pieces of carrot in the jar
  • Add first half cup coconut milk to the coarse pieces of carrots in jar and grind for few minutes.
  • Add remaining half cup coconut milk to the fine pieces of carrots in jar
  • Very finely ground carrot using coconut milk
  • Now serve the fresh coconut milk carrot smoothie immediately
