Coconut Milk Carrot Smoothie

Ingredients
  

  • 1 Cup Small pieces of carrot
  • 1/2 Cup Small pieces of Coconut
  • 1/2 tbsp Jaggery powder Optional
  • 1 ½ Cup Water

Instructions
 

  • Choose the good quality carrots and coconuts
  • Clean the carrots
  • Remove coconut flesh from shell and cut them in to small pieces
  • If using regular blender cut the carrots and coconut pieces in to small pieces
  • Gather all the ingredients

Preparation of coconut milk along with jaggery

  • Heat water in a pan until warm
  • Grind small pieces of coconut and jaggery in jar
  • Add 1 cup warm water to the coarse mixture of coconut and jaggery
  • Add remaining 1/2 cup warm water to the fine mixture of coconut and jaggery
  • Filter the finely ground coconut mixture
  • Extract the coconut milk using cloth bag

Finally blend both the carrot puree andthe extracted coconut milk

  • Place small pieces of carrot in the jar
  • Add first half cup coconut milk to the coarse pieces of carrots in jar and grind for few minutes.
  • Add remaining half cup coconut milk to the fine pieces of carrots in jar
  • Very finely ground carrot using coconut milk
  • Now serve the fresh coconut milk carrot smoothie immediately
